Chocolate Chip & Vanilla Protein Cookies

Gluten free, low sugar, protein packed!

Quick and easy to make, gluten free & low sugar.

Ingredients:

1/2 cup olive oil margarine
1/4 cup Stevia (I use Truvia baking mix)
2 eggs
1/2 cup of gluten free baking mix (I use Cloud Nine)
1/2 cup vanilla protein powder
1/2 cups Stevia semi sweet chocolate chips

Recipe Instructions:

  1. Cream margarine & stevia with a mixer until smooth
  2. Add eggs & blend
  3. Slowly add the dry ingredients & mix
  4. Fold in the chocolate chips
  5. Chill for 4-6 hours in the fridge
  6. Roll into balls & bake on a parchment paper lined cookie sheet at 350 F

 

Prep Time: 10 minutes + 4-6 hours chill time
Cook Time: 8-10 minutes
